Yes \u2014 this people who inhabited Texas, of old Spanish or Mexican descent, is the main architect of one of the most loved fusion cuisines in the world. A cuisine that, before being a cuisine, was a railway line. Let us explain. In 1785 the Texas \u2013 Mexican Railway \u2014 shortened to Tex Mex \u2014 was inaugurated: the first railway line connecting Texas and Mexico. A true bridge between cultures that brought all kinds of crossovers, including culinary ones. It was actually the train that made many Mexican products available on the American market.<\/p>\n
At first, Tex Mex was the nickname of the railway. Then they started using it for Texans of Mexican origin. Finally also for the food. Tex-Mex (Texan and Mexican) describes a set of dishes that blend American and Mexican cuisine, creating completely new flavors.<\/p>\n
Tex-Mex cuisine is, let\u2019s say, democratic. It treats \u201chumble\u201d ingredients (like corn) on a par with \u201cricher\u201d ones, for example meat.<\/p>\n
Tex-Mex dishes rely on a few non-negotiable ingredients \u2014 first of all corn flour, typical of South America, from which come tacos, nachos, burritos and tortillas, and then the vegetables: peppers, chillies, tomatoes, potatoes, lettuce, onions and beans, called chiles around here.<\/p>\n
And of course meat, which is never missing (cattle ranches are everywhere out there).<\/p>\n
There are plenty of Tex-Mex sauces, more or less spicy \u2014 among the most popular, definitely tabasco and guacamole. Exotic fruits like avocado, pineapple and papaya are used in both sweet and savory recipes, often to prepare sauces or salads to go with meat.<\/p>\n
